This fresh peach salsa is perfect for summer: juicy, ripe peaches and jalapeno create a sweet & spicy condiment that works equally well with chips, salmon and chicken.

2 to 3fresh peachesroughly diced
1/2 to 2jalapenosseeds removed, minced
Salt to taste
Place the peaches in a medium bowl. Add the chopped cilantro, jalapenos, red onion, lime juice and salt. Mix together gently with a large spoon. Serve with chips or on top of salmon, chicken, or other main dishes.
Use gloves when handling the jalapeno to minimize the burning sensation on your skin.
