Easy Peanut Butter Cups

Line a 12 cup mini muffin tin with mini baking cups.
Melt the chocolate in a small bowl microwave-safe bowl using 30 second increments in the microwave. When fully melted, drizzle a small amount of chocolate to cover the bottom of each mini baking cup using a spoon. Place the muffin pan in the fridge to allow the chocolate to harden.
Stir the peanut butter and icing sugar together in a bowl until smooth. Take the muffin pan out of the fridge and put about 1 teaspoon of the peanut butter mixture in each baking cup.
Drizzle with the rest of the chocolate so the peanut butter is covered. Sprinkle each peanut butter cup with a small amount of flake sea salt.
Refrigerate until the chocolate has hardened. Then enjoy!
Powdered sugar: Some commercially available versions of sugar use bone char in the processing as a decolorizing filter. Look for a brand that's marked vegan to avoid this. Chocolate: Many versions of chocolate are dairy-free, look at the label carefully for any milk products. However, some of those brands may use regular sugar (see note on powdered sugar), so to keep these vegan, make sure to look for vegan chocolate. Both semi-sweet and dark chocolate work well in this recipe!
